Three Delicious Dinner Ideas!

I’ve been on a cooking kick lately. I mean I cook dinner every night, but it’s generally one of about 8 things that I cycle through… grilled chicken, burgers, crockpot salsa chicken… Bored with the usual, I ventured out with some yummy new recipes that were a big hit! Here they are…

One-Pan Salmon And Veggie Dinner

Not a bite was left of this one. Even the asparagus was AMAZING! So, if you are looking for a fairly quick, delicious, healthy meal, this one is for you! I’ve even made the potatoes twice in the last week pairing them with different meats.

With the cold weatherΒ we’ve had lately, I was craving some chili. I made this Slow Cooker Sweet Potato Chili years ago and decided to make it again.

My husband somewhat surprisingly loved it! I made it meatless, used dry beans instead of canned (1/2 cup dry beans = 1 15oz can) and used boxed tomatoes instead of canned. I also snuck in some carrots pulsed first in the food processor. Paired with some cornbread it went quick and I’m planning on making another batch today to freeze.

Another recipe I made years ago fromΒ Andie Mitchell (formerly Can You Stay for Dinner?) are these Loaded Quinoa Veggie Burgers. TheyΒ are packed with protein AND flavor, while being low in fat.

Once again I subbed dried beans for canned and we had these wrapped in lettuce. The only downside I would say is that I had quite a few dishes to clean up after, but these burgers were absolutely worth it.
